Happy Sunday! It is friggggid round these parts (thanks #BombCyclone) so meals this week are warming, hearty and lend themselves to inviting a friend or two over.
These lentil stuffed beauts are from The Minimalist Baker. They’re ready in under an hour…that’s like just one episode of Stranger Things. AND if you buy precooked lentils (Trader Joe’s has my favorite) you’ll be out of the kitchen in 30.
These kefta from Smitten Kitchen are an easy weeknight meal and it’ll likely introduce you to some spices you don’t pull out from the back of your cabinet, like ever.
Annnd, you can easily just cube up some tofu or just add more veggies and skip the lamb entirely
Warm artichoke salad from Hip Foodie Mom is a great way to both have a salad and stay (relatively) warm on nights when it gets dark at 4pm.
Pan roasted scallops and risotto from Pinch of Yum. These are so good, but I’d honestly make anything Lindsay (of POY) makes. This looks super hard and fancy but it’s easy enough to cook with friends while drinking too much.
Immune busting Chana Dal with Spinach from Crunchy Radish. Lentils and I took a long break after my trip to India but we’re back on good terms this winter. Miranda, of Crunchy Radish compiles a bunch of recipes for a beginning of year ‘clean up’–they’re all full of veggies and fiber and otherworldly flavah.
These Adult Spaghettios from Bon Appetit were introduced to me at my friend’s apartment last week. She made these and a big salad and a couple of us drank too much wine and watched HGTV. Crazy stuff. They were good! But honestly, they’re just so freaking cute.
If I were to make this I’d probably add a bunch of spinach and omit the meatballs entirely, but you do you.
